Information

Hanging Weight.  The weight of the side before being cut up and processed.  HW is roughly 65% of live weight.  The finished weight is roughly 65% of hanging weight. 

Side, Half Side.  Side is the left or right half of the animal.  A half side is a 1/4 of the animal, but equal cuts from each side.

Steer, Heifer.  Male and female respectively.

Freezer Space Needed.  Roughly 9 cubic feet needed for a side of beef.  Roughly 5 cubic feet needed for a pig.
